I haven’t posted any recipes in a while – that’s because Troy is back grilling and I’m totally loving and enjoying it. (You can check out his grilling escapades here.) But here’s a quick and easy recipe – perfect for vegetarians! And for those skeptical about tofu, give it a try, you might be surprised!
All you need is a block of firm tofu, cut into bite-sized cubes. What I did was pan-fry the tofu cubes on a drizzling of olive oil until browned. Then I seasoned with salt and pepper. If you want it crisper and with more flavor, you can lightly coat the tofu in flour and garlic powder before pan-frying.
Then serve the dish with sweet and sour sauce – I just used a bottled sauce (quick and easy) – mixed with some ground peanuts, if desired.

A few days after I recovered from the flu, this was all my stomach could handle. Anything heavier than this, my body would reject. I didn’t mind though, I love cucumber sandwiches!
